Bison Chili


  • 2 pounds ground bison (may substitute 1 pound of ground turkey)
  • 1 15 oz can kidney beans
  • 1 15 oz can garbanzo beans
  • 1 15 oz can pinto beans
  • 1 15 oz can black beans
  • 1 6 oz can tomato paste
  • 1 14.5 oz can diced and fire roasted tomatoes
  • 1 12 oz jar salsa verde

Brown ground bison (ground turkey if substituted) in a large stock pot.  There will be little or no fat to drain off.  Add remaining ingredients and bring to a boil.  Simmer for at least 1 hour prior to serving. 

You can add fresh diced tomatoes, spices to add your desired level of flavor and heat. Garnish with cheddar cheese, black olives, sour cream.
